Tyrosol,
or 4-(2-hydroxyethyl)phenol, is an antioxidant found in olive oil
and other foods.
It inhibits the effects of compounds such as oxidized LDL
cholesterol.
Furthermore, researchers have found that in some microbes, tyrosol
acts as a quorum-sensing molecule.
A quorum-sensing molecule coordinates
activity among groups of many single-celled organisms, such as those that cause
yeast infections.
